THE FIRST TRACCE RESTAURANT OPENS IN MILAN. AN INNOVATIVE, SUSTAINABLE RANGE OF FOOD
The first TRACCE restaurant has been opened in Milan in Piazza Stati Uniti d’America. This format offers an innovative restaurant space for lunch breaks, featuring a food court surrounded by real boutique outlets offering street food.
This venue also features sustainable solutions aimed at a service that minimises the use of plastic, purely limiting it to take-aways.
The concept behind TRACCE covers CIRFOOD’s key values, focusing on consumers and their tastes, inviting them to choose their own perfect menu every day: professional chefs then prepare hot and cold dishes to take customers on a culinary journey based on tradition and innovation, offering high-quality, fresh, authentic food.
TRACCE also strives to offer a sustainable catering service: the furniture in the venue is made with recycled materials and uses LED lights to limit energy consumption. The napkins are exclusively made from compostable material while the trays – made with recycled material – are sanitised, preventing the use of paper place mats: over 150,000 will therefore be saved every year.
It also makes a significant contribution in the fight against plastic: drinks are only served through a free-beverage service in glass cups, while plastic bottles are banned and replaced by reusable flasks.
The venue covers a surface area of 1,300 m2 for a total of about 330 places, including the outdoor seating area. It’s a modern food court featuring separate areas offering a wide variety of food, so you can choose between: a corner dedicated to first courses, known as “Il Pastaio”, while the “Gastronomia” offers meat or fish main courses, letting you add hot and cold side dishes, fruit salads and desserts, as well as “La Rotisserie” with a rotisserie spit for making spit-roast chicken.
While in the pizzeria corner, you will be able to order traditional pizzas made with multi-grain or whole wheat dough, mini deep-dish pizzas and stuffed focaccia. Last but not least, the bar offers snacks, paninis and make-your-own salads with grains or a choice of 20 other ingredients.
