Collective Catering Services – UNI 11584
Collective catering plays an important role in offering a proper and balanced diet, essential for people’s well-being and a healthy lifestyle. For this reason, CIRFOOD has chosen to adopt this standard, which provides guidelines for designing menus for collective catering, particularly in the school sector.
Some of the key criteria on which UNI 11584 is based include:

public health and protection of consumer interests;

food safety;

reduction of food waste and therefore waste minimization and energy savings;
The standard also takes into account:

the type of community served (e.g. schools, hospitals, social-care facilities, etc.);

the type of users and their nutritional needs;

menu planning frequency, especially based on the seasonality of raw materials.
The presence of Guidelines for menu planning allows the definition of objective criteria and requirements to enhance the value of food service offerings for various communities. These aim to reduce waste, promote the use of quality food products, and ensure transparency for consumers.
This certification does not apply to commercial food services.
